My Chinese American family and friends rely heavily on salt, soy sauce and oyster sauce to create flavorful dishes, but the special brunch that Chef Lam prepared for 25 of us used very little of those ingredients and instead incorporated fresh herbs, fruits and various spices that resulted in supremely delicious and tasty dishes, yet were light and healthy.

Chef Lam’s willingness to engage his clients and their guests in “food talk” made for a memorable event wherein everyone not only got to eat well, but to take home information and an inspiration to experiment on their own using a variety of techniques and ingredients.

Equally remarkable and admirable to me is Chef Lam’s commitment to helping aspiring young chefs, a couple of whom had assisted at my event.
