A true fact: A college-age boy would rather eat an entire bag of chips than fix himself a healthy meal.

Odds are, he won’t develop a love of cooking on his own. Studies show that boys don’t cook for themselves or others because they simply don’t know how. The fear factor is huge for them: they worry about making a mess, doing things wrong, going into territory where they don’t know the rules. And they don’t know how easy and rewarding it is to master this skill. Or how much fun they can have in the kitchen.

They also aren’t getting the right message about eating well. Healthy diets for boys receive little media attention. Parents often focus on quantity over quality, assuming that because boys will devour pizza, burgers and two-foot long subs, these are the perfect foods for them—and that somehow, because they have such big appetites, it doesn’t really matter what they eat as long as they stop being hungry.

Yet what happens in boys’ bodies and brains when they fill up on foods high in sugar, salt and unhealthy fat has both short-term and long-term consequences. Obesity among young men is rising. And a sobering study published by The Annals of Internal Medicine predicts that over their lifetimes, nine out of ten men will become overweight.

Chef German Lam, still a boy at heart and a father of two sons, understands what’s keeping guys out of the kitchen. He’s launching a revolutionary new cooking school concept to inspire boys ages 18-24 to pick up a knife, smell the garlic and get cooking. He promises to release the inner cook in every boy, while teaching them to prepare healthy food, relying on instinct rather than recipes, for success.

“Before you know it, these boys will have children of their own. Do we want to further another generation of parents who feed their kids a steady diet of fast food?” asks Lam. “Now is a great time to bring these boys up to speed in terms of healthy cooking and eating.”

Starting June 7, 2009, he is offering three sessions for eight to twelve boys in a restaurant kitchen, where they have room to move and can enjoy the excitement of working in a professional space. “A restaurant kitchen alone is a great place to experiment. It’s like setting guys loose in a body shop!” says Lam. And, he points out, this is an all guys thing. No women to get snarky about a spill here or an unexpected innovation there. The boys will prepare a three-course meal every week and enjoy it for lunch. And, they’ll clean up after themselves. That, says Lam, is a very important part of the lesson!

“Boys love these foods and I can’t wait to show them how easy it is to prepare each meal,” says Lam. “And, I plan to tell them that anyone can take a girlfriend out to a restaurant. But if they really want to impress her, they’ll cook her a dinner.”

About the Chef: German Lam has worked at the Ritz Carlton in Cleveland and Boston, the Chatham Bars Inn on Cape Cod and the Harvard Club in Boston. Currently the head of Glam Foods, LLC, a self-described food coach and father of two sons, he teaches boys in a supportive atmosphere and in the spacious setting of a professional restaurant kitchen.
