German’s a very fun guy, and an excellent chef and teacher. He explains things in a way that a young cook can understand. He gave me the flexibility to cook what I wanted to. I don’t like to follow recipes and prefer to improvise. German likes that approach which he calls ‘freestyle cooking’.
As we prepared dishes, he made suggestions but never really forced anything. He taught me what tools (pots, pans, knives, etc) worked best but stressed that you don’t need a fancy kitchen, with cool gadgets, to make great food.
He taught me knife skills and how to keep my knives sharpened. I learned the best and most efficient ways to cut vegetables and fruits. He gave me nutritional tips and stressed healthy cooking. We cooked dishes from India, the Caribbean, France, and Italy. I learned a lot about the spices from each of these regions which I can use with various ingredients.
German’s enthusiasm is contagious. The cooking experiences I’ve had with him have been the best.
