Never have I experienced a group of people that ALL found every bit of food presented to us to be out of this world. You were not lying when you said that your intention was to create a memorable evening. I can assure you that you, Andrew and Lilly accomplished just that. Karin and I basically rehashed every dish yesterday in the car as we were travelling to pick up our girls. We had the privilege of sharing our leftovers with Karin’s family whou came over yesterday to suprise Karin yet one more time!
Everything from the wonton bacon/scallop starters, mushrooms, bruschetta to the mains with the shallot sauce, ginger scallion (huge hit) and potatoes to the veg. There was not one dish that wasn’t thoroughly enjoyed!!!

It was such an amazing and unique experience to have someone with German’s passion and ability cooking for you in such an intimate setting. German was able to create a menu that was diverse, unique, and personally catered to the flavors and ingredients that Becca and the other guests enjoy. The extra touch of quality in each dish had every guest raving about the experience. We are still enjoying the leftovers each night and hope they don’t run out! We cannot begin to tell you how special and “forgettable” our beautiful 40th Anniversary dinner with our family in our own dining room, set with such care, meant to us. To be able to sit and do nothing more than enjoy the incredible 5 course gourmet dinner, to just enjoy the conversation of our family and being together in our home-what a wonderful treat for this very special occasion. Yesterday, the day after this ‘Glam” extravaganza, we recounted each and every course so artistically presented. No one can quite figure out what made the Chilean Sea Bass so buttery and perfectly done, but I continue to relive every bite. From this moment on your Sea Bass will be the basis of comparison for all future sea bass dining.

German Lam’s relaxed, yet professional, on-site preparation of the hors d’oeuvres was the highlight of the event. I’ve had two amazing lessons with German. These lessons were a Christmas gift from my parents.
German’s a very fun guy, and an excellent chef and teacher. He explains things in a way that a young cook can understand. He gave me the flexibility to cook what I wanted to. I don’t like to follow recipes and prefer to improvise. German likes that approach which he calls ‘freestyle cooking’.
As we prepared dishes, he made suggestions but never really forced anything. He taught me what tools (pots, pans, knives, etc) worked best but stressed that you don’t need a fancy kitchen, with cool gadgets, to make great food.
He taught me knife skills and how to keep my knives sharpened. I learned the best and most efficient ways to cut vegetables and fruits. He gave me nutritional tips and stressed healthy cooking. We cooked dishes from India, the Caribbean, France, and Italy. I learned a lot about the spices from each of these regions which I can use with various ingredients.
German’s enthusiasm is contagious. The cooking experiences I’ve had with him have been the best.

My Chinese American family and friends rely heavily on salt, soy sauce and oyster sauce to create flavorful dishes, but the special brunch that Chef Lam prepared for 25 of us used very little of those ingredients and instead incorporated fresh herbs, fruits and various spices that resulted in supremely delicious and tasty dishes, yet were light and healthy.
Chef Lam’s willingness to engage his clients and their guests in “food talk” made for a memorable event wherein everyone not only got to eat well, but to take home information and an inspiration to experiment on their own using a variety of techniques and ingredients.
