Testimonials

Chef Lam has inspired me to share my learning and cooking experiences with my family and we are creating not only great meals but wonderful, fun memories in the kitchen. German is patient and incredibly creative but most importantly very supportive of my personal journey to eat clean. Lisa-Weston

In twelve sessions, German was able to transform me into someone who knows how to run an efficient kitchen and whip up delicious meals impromptu.  I never knew I could become that person!” Jennifer-Belmont

My sessions with German were also fun – he got my kids involved picking herbs and washing veggies, so that cooking has become a family activity we all feel really good about.   I’ll never need to resort to restaurants or prepared foods again with the skills to make something at home that’s tastier and healthier, at a fraction of the cost.  On a personal level, German is as delightful as he is talented, I just wish I’d found him sooner!” ”I finally feel a sense of freedom and competence in the kitchen; but most importantly, I have peace of mind knowing I can always answer the question, “what’s for dinner”! Jennifer-Belmont

Cooking with German Lam has been an inspiration.  His energy and passion for food and life is contagious.  Since working with German,  I have transformed from someone with little to no skills in the kitchen to a more organized, confident, and happy cook.  I no longer feel the need to have a cookbook open to bake a potato or boil water!  I still use recipes but also feel confident freestyling a meal with oil, herbs, chicken stock and other cooking basics. I have learned to engage my senses while cooking.  I feel as if I am seeing, tasting, smelling, feeling, hearing food for the first time in my life.  I have learned to try new things and truly discern between what flavor, size, color, texture of foods I like and dislike.   My family and I are eating healthier and feeling more energized by our meals.  We are also saving money by not eating out as often or buying lots of pre-processed foods.  Most important, my family is reconnecting with each other each time we prepare food, food shop, or sit down to eat a meal together (as each of these things has taken on new meaning for us since working with German).   As a busy Mom of two toddlers, I love German’s concept that a 2-3 hour block of time carved out for cooking can feed my family healthy meals for the whole week.  Re-heating healthy, delicious meals on a busy weeknight is easy and yet gratifying.  I am so glad I decided to work with German, it has been a pleasure and my only regret is that I did not do it sooner. “German has a unique, laid back style that makes it easy for even the most reluctant cook to feel comfortable asking questions and engaging in the process of creating delicious food!” Stephanie Howard-Wayland Hollow PTO

“He is an amazing chef who really understands the concept of “food is medicine”. He teaches his clients how easy (and fun!) it can be to cook at home. All of his recipes are light and healthy, and contain only natural ingredients.” Frances Konstatilakis-RD, LDN, ACSM-CPT

“It was clear from the beginning that German was not like the rest. He is energetic, eloquent, and professional. At the same time, young people find him very approachable and he has a presentation style that captures their interests and keeps them engaged.” David S. Sellers, Jr.-Executive Director, The John M. Barry Boys & Girls Club

“If you have an idea (or even a clue) of where you want to go, he’ll help you get there! The curriculum evolves directly from you; where you are now, and what you think you’d like to accomplish.” Steve Tylicki-Oxford, MA

“German is an intelligent, capable, and personable gentleman who managed his team with decisiveness. I am happy to recommend Glam Foods to any individual or business that requires professional culinary services.” Richard L. Kobus-Senior Principal, TSOI/KOBUS & ASSOCIATES, INC

Chef Lam is a teacher; but that’s not what makes the experience with him special. What works so well is that he’s a guide, and a coach.

If you have an idea (or even a clue) of where you want to go, he’ll help you get there! The curriculum evolves directly from you; where you are now, and what you think you’d like to accomplish. Sure, there are recipes, techniques, and he’ll answer all of your questions with as much detail as you’d like – but that’s the least of it. The thing is: he loves what he does, and that, my friend, makes all the difference! His relationship with cooking is like an aura that brightens the kitchen, and inspires the apprentice to success. When you cook in his realm, you don’t just do it to the food, you work with the food… after all, it will become part of you; you are what you eat!

This is “no-tricks” cooking. It’s not about ooh and ahh, it’s about YUMMMM!

A recipe is just some data. Reading (or memorizing) a recipe is not learning how to cook. Chef Lam will enrich your experience moment-to-moment while you do the actual cooking – getting all five senses involved and tuned-in, as you execute the process. When you become aware of what’s really happening to the food as a result of each input, the recipe will be merely a memory-jogger, not a map or a formula. (Hmm, how about some more of this? Or, why not a bit of the other? In fact, maybe we could try…!) If you enjoy eating good food, this is the only way to cook!

And by the way, good food isn’t just taste. Personally, I have a (common) weakness of catering to my tastes, rather than to my health (sound familiar?). But I was delighted to find that high-quality food, prepared well, can produce delicious results in things that I don’t normally even like. What I mean is that while I’m making food that tastes great to me, I’m also making very healthful food! (And no, it’s not “healthy”, because it’s not even alive; things that are not alive are not-at-all “healthy”… in fact, they’re dead! But this food sure is healthful, especially compared to restaurant fare.)

I recently had the pleasure of experiencing the working with Glam Foods and experiencing firsthand the culinary artistry of Chef German Lam. As the cofounder of Tsoi/Kobus & Associates Architects and the Principal in Charge on the new Culinary Arts Building at Johnson & Wales, I have worked closely with both the faculty and several fine students. In this capacity, I have been afforded the opportunity to interact with many outstanding individuals in the culinary field.

Chef German Lam was instrumental in the success of a party given recently at my home for 60 guests. He was the leader of the culinary staff which provided a large number of outstanding menu items for the event. He displayed a passion for great food and demonstrated the culinary skills of a Master Chef.German is an intelligent, capable, and personable gentleman who managed his team with decisiveness. I am happy to recommend Glam Foods to any individual or business that requires professional culinary services.

Thank you, German, for a wonderful evening of simple healthy cooking! For our mom’s night out, German prepared a menu for 10 and simply inspired us to try different recipes and techniques in the kitchen.

German fully engaged the group to actively participate in the preparation and cooking process and shared his cooking insights in a very casual tone. From the tomato crabmeat with baby arugula bruschetta to the roasted miso sake salmon with thai basil, the dishes were fragrant and simple to create!

German taught us techniques that would cut time in the kitchen and create efficiencies to help optimize a menu plan. I feel confident in preparing a delicious gourmet meal for my family and friends.
